Cellar Techniques
These grapes were harvested at full ripeness. Gentle pressing of the grapes, which result in quality juice. Cold fermentation followed. The wine matured in stainless steel tanks on the lees for four months, stirring it once a week to enhance the flavour. 1% of wood matured chardonnay (2 months, French oak) were blend with this wine to complement the character.
